I recently discovered the most amazing secret... making your own granola is super easy. This granola recipe, created by our cousin Christina, is serious a life changer! Never again will I buy crappy expensive granola at the store. We've added making weekly batches of granola to our routine. The best part, it is sweetened naturally by using  honey and dried fruit. The other beauty is you can change the recipe easily by changing the mixture of fruit and nuts.

Base Ingredients

  • 2 cups rolled oats
  • 1 cup coconut
  • 1 cup sliced raw almonds
  • 1/2 cup raw pumpkin seeds

Mix and match

  • Any type of raw nuts you fancy, totaling 1-2 cups
  • 1 cup raw pecans
  • 1 cup raw walnuts
  • Note if you use roasted nuts you do not need to bake in the oven. Add the roasted nuts with the dried fruit at the end.

Sauce Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup honey

Dry Fruit Ingredients

  • Whatever fruit you fancy, totaling 2-3 cups
  • 1 cup dried cranberries
  • 1 cup dried raisins
  • 1 cup dried apricots

Baking Directions

  • Preheat oven to 325 degrees.
  • Heat coconut oil in a sauce pan until it turns to a liquid. Turn heat off and add honey. Add liquid to dry ingredients and cover sheet pan. Sprinkle with cinnamon.

Timing for baking granola

  • 10 mins and stir
  • 8 mins and stir
  • 8 mins and stir

Add dry fruit to the granola and let cool. Be sure granola is room temp before putting away in containers. This ensures your granola stays crunchy.
